  • 2 large flour tortillas
  • 4 large eggs
  • 2 tbsp milk or cream
  • 1/2 cup black beans rinsed and drained
  • 1/2 cup diced potatoes pre-cooked
  • 1/4 cup diced onions
  • 1/4 cup diced bell peppers
  • 2 tbsp olive oil or butter
Protein Options
  • 1/2 cup cooked chorizo or sausage
  • 1/4 cup diced ham
  • 2 strips bacon cooked and crumbled
  • 1/4 cup tofu scramble vegan option
Cheese & Extras
  • 1/2 cup shredded cheddar or Monterey Jack cheese
  • 2 tbsp sour cream or Greek yogurt
  • 2 tbsp fresh salsa or pico de gallo
  • 1/4 avocado sliced
  • Fresh cilantro for garnish
  • Hot sauce to taste

Method
 

Prepare Ingredients
  1. Dice all vegetables and have ingredients ready
  2. If using potatoes, cook until tender (can be done ahead)
  3. Warm tortillas slightly to make them pliable
Cook Fillings
  1. Heat oil in a non-stick skillet over medium heat
  2. Sauté onions and peppers until softened (3-4 minutes)
  3. Add potatoes and cook until golden brown
  4. In a bowl, whisk eggs with milk, salt, and pepper
  5. Pour eggs into skillet and scramble until cooked but still moist
Assemble Burritos
  1. Lay tortillas flat on a work surface
  2. Divide egg mixture between the two tortillas
  3. Add beans, protein choice, and cheese
  4. Fold in sides of tortilla, then roll tightly from the bottom
  5. Optional: Lightly grill the burrito seam-side down to seal
Serve
  1. Cut burritos in half diagonally
  2. Top with avocado, salsa, sour cream, and cilantro
  3. Serve immediately with hot sauce on the side
