Prepare Ingredients
- Dice all vegetables and have ingredients ready
- If using potatoes, cook until tender (can be done ahead)
- Warm tortillas slightly to make them pliable
Cook Fillings
- Heat oil in a non-stick skillet over medium heat
- Sauté onions and peppers until softened (3-4 minutes)
- Add potatoes and cook until golden brown
- In a bowl, whisk eggs with milk, salt, and pepper
- Pour eggs into skillet and scramble until cooked but still moist
Assemble Burritos
- Lay tortillas flat on a work surface
- Divide egg mixture between the two tortillas
- Add beans, protein choice, and cheese
- Fold in sides of tortilla, then roll tightly from the bottom
- Optional: Lightly grill the burrito seam-side down to seal
Serve
- Cut burritos in half diagonally
- Top with avocado, salsa, sour cream, and cilantro
- Serve immediately with hot sauce on the side
