Turkey Taco Salad

Ingredients
  

Turkey Taco Meat
  • 1 lb ground turkey
  • 1 tbsp olive oil
  • 1 packet taco seasoning
  • 1/4 cup water
Salad Base
  • 6 cups chopped romaine lettuce
  • 1 cup cherry tomatoes halved
  • 1/2 cup black beans rinsed and drained
  • 1/2 cup corn kernels fresh or canned
  • 1/4 cup diced red onion
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped cilantro
Toppings & Dressing
  • 1 ripe avocado sliced
  • 1/4 cup sour cream
  • 1/4 cup salsa
  • Tortilla chips crushed (optional)
  • Lime wedges for serving

Method
 

Prepare Turkey Taco Meat
  1. Heat olive oil in a large skillet over medium heat.
  2. Add ground turkey and cook, breaking it apart with a spatula, until no longer pink, about 7 minutes.
  3. Stir in taco seasoning and water; simmer for 5 minutes until mixture thickens.
  4. Remove from heat and set aside.
Assemble Salad
  1. In a large salad bowl, combine chopped romaine lettuce, cherry tomatoes, black beans, corn, red onion, shredded cheddar, and cilantro.
  2. Add the cooked turkey taco meat on top of the salad base.
Add Toppings and Serve
  1. Top salad with sliced avocado.
  2. Drizzle sour cream and salsa over the salad.
  3. Sprinkle crushed tortilla chips on top for crunch, if desired.
  4. Serve with lime wedges on the side.
