Preparation
- Heat milk, cinnamon stick, zest, and sugar in a saucepan until simmering.
- Remove from heat and let it infuse for 10 minutes, then strain.
- Place bread slices in a shallow dish and pour the warm milk over them. Let soak for 5-10 minutes.
Cooking
- Carefully dip each soaked slice into the beaten eggs.
- Heat olive oil in a skillet over medium heat.
- Fry the bread slices for 2-3 minutes per side until golden brown.
Finishing
- Mix the sugar and ground cinnamon in a small bowl.
- Toss the hot torrijas in the cinnamon sugar mixture. Serve warm.
