Torrijas Spanish Style French Toast

Ingredients
  

For the Infusion
  • 500 ml milk
  • 1 cinnamon stick
  • 1 strip lemon or orange zest
  • 3 tbsp sugar
For the Toast
  • 1 loaf stale baguette or brioche sliced thick
  • 2 large eggs beaten
  • Olive oil for frying
For Coating
  • 1/4 cup sugar
  • 1 tsp ground cinnamon

Method
 

Preparation
  1. Heat milk, cinnamon stick, zest, and sugar in a saucepan until simmering.
  2. Remove from heat and let it infuse for 10 minutes, then strain.
  3. Place bread slices in a shallow dish and pour the warm milk over them. Let soak for 5-10 minutes.
Cooking
  1. Carefully dip each soaked slice into the beaten eggs.
  2. Heat olive oil in a skillet over medium heat.
  3. Fry the bread slices for 2-3 minutes per side until golden brown.
Finishing
  1. Mix the sugar and ground cinnamon in a small bowl.
  2. Toss the hot torrijas in the cinnamon sugar mixture. Serve warm.
