Method
Prepare Crust
- Preheat oven to 350°F (175°C). Wrap outside of a 9-inch springform pan with foil
- Mix crust ingredients until resembles wet sand
- Press firmly into bottom and partly up sides of prepared pan
- Bake for 10 minutes, then cool while preparing filling
Make Filling
- Beat cream cheese until completely smooth, scraping bowl frequently
- Gradually add sugar and beat until incorporated
- Add eggs one at a time, beating just until combined after each
- Mix in sour cream, heavy cream, vanilla, flour, salt, and lemon zest if using
- Pour over cooled crust and smooth top
Bake
- Place springform pan in a larger roasting pan and add hot water until halfway up sides
- Bake for 60-70 minutes until edges are set but center still jiggles slightly
- If using topping, mix ingredients and spread over hot cheesecake, then bake 10 minutes more
- Turn off oven, crack door open, and let cheesecake cool in oven for 1 hour
- Remove from water bath and cool completely on wire rack, then refrigerate overnight
