Ingredients
  

Pasta and Sauce
  • 1 lb elbow macaroni
  • 1/2 cup butter
  • 1/2 cup all-purpose flour
  • 4 cups whole milk
  • 4 cups shredded sharp cheddar
  • 2 cups shredded Gruyère
  • 1 tsp mustard powder
  • 1/2 tsp cayenne pepper
Topping
  • 1 cup panko breadcrumbs
  • 1/4 cup grated Parmesan
  • 3 tbsp melted butter
  • 1/4 cup chopped fresh parsley

Method
 

Cook Pasta
  1. Preheat oven to 375°F
  2. Cook pasta al dente in salted boiling water
  3. Drain and set aside
Make Cheese Sauce
  1. Melt butter in large saucepan over medium heat
  2. Whisk in flour and cook for 1 minute until golden
  3. Gradually whisk in milk until smooth
  4. Cook until thickened, stirring constantly
  5. Remove from heat and stir in cheeses until melted
  6. Season with mustard powder, cayenne, salt and pepper
Combine and Bake
  1. Add drained pasta to cheese sauce, stir to coat
  2. Transfer to greased 9x13 baking dish
  3. Mix topping ingredients and sprinkle over pasta
  4. Bake for 25-30 minutes until bubbly and golden
Serve
  1. Let rest for 10 minutes before serving
  2. Garnish with additional parsley if desired
