  • 2 tbsp lemon juice
  • 1 tsp black pepper
  • 1 tsp salt
Herb Butter
  • 1/2 cup butter softened
  • 2 tbsp parsley finely chopped
  • 1 tsp lemon zest
  • 1 clove garlic minced
  • 1/4 tsp salt

Method
 

Marinate Lamb
  1. Combine olive oil, garlic, herbs, lemon juice, salt, and pepper
  2. Coat lamb chops thoroughly with marinade
  3. Cover and refrigerate for at least 2 hours or overnight
Prepare Herb Butter
  1. Mix softened butter with parsley, lemon zest, garlic, and salt
  2. Form into log shape using plastic wrap
  3. Chill until firm, then slice into rounds
Cook Lamb Chops
  1. Bring lamb to room temperature before cooking
  2. Heat grill or skillet to high heat
  3. Cook chops 3-4 minutes per side for medium-rare
  4. Rest for 5 minutes before serving
  5. Top with herb butter slice
