Ingredients
  

Crust
  • 2 cups golden Oreo cookie crumbs
  • 6 tbsp butter melted
  • 1/4 cup granulated sugar
Cheesecake Filling
  • 24 oz cream cheese softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 cup sour cream
  • 2 tsp vanilla extract
  • 1/4 cup all-purpose flour
  • 1/2 cup strawberry puree
Strawberry Crunch Topping
  • 1 cup crushed golden Oreos
  • 1/2 cup freeze-dried strawberries crushed
  • 4 tbsp butter melted
  • 2 tbsp brown sugar
Strawberry Glaze
  • 1 cup strawberry preserves
  • 2 tbsp water
  • 1 tbsp lemon juice

Method
 

Prepare Crust
  1. Preheat oven to 325°F (165°C)
  2. Mix cookie crumbs, melted butter, and sugar
  3. Press into bottom of 9-inch springform pan
  4. Bake for 10 minutes, then cool completely
Make Filling
  1. Beat cream cheese and sugar until smooth
  2. Add eggs one at a time, beating after each
  3. Mix in sour cream and vanilla extract
  4. Fold in flour until just combined
  5. Gently swirl in strawberry puree
Bake Cheesecake
  1. Pour filling over cooled crust
  2. Place springform pan in water bath
  3. Bake for 55-65 minutes until edges are set but center jiggles slightly
  4. Turn off oven and let cheesecake cool in oven with door slightly open for 1 hour
  5. Refrigerate for at least 6 hours or overnight
Add Toppings
  1. Combine crunch topping ingredients
  2. Heat glaze ingredients until smooth
  3. Spread glaze over chilled cheesecake
  4. Sprinkle crunch topping around edges
  5. Garnish with fresh strawberries before serving
