Prepare Crust
- Preheat oven to 325°F (165°C)
- Mix cookie crumbs, melted butter, and sugar
- Press into bottom of 9-inch springform pan
- Bake for 10 minutes, then cool completely
Make Filling
- Beat cream cheese and sugar until smooth
- Add eggs one at a time, beating after each
- Mix in sour cream and vanilla extract
- Fold in flour until just combined
- Gently swirl in strawberry puree
Bake Cheesecake
- Pour filling over cooled crust
- Place springform pan in water bath
- Bake for 55-65 minutes until edges are set but center jiggles slightly
- Turn off oven and let cheesecake cool in oven with door slightly open for 1 hour
- Refrigerate for at least 6 hours or overnight
Add Toppings
- Combine crunch topping ingredients
- Heat glaze ingredients until smooth
- Spread glaze over chilled cheesecake
- Sprinkle crunch topping around edges
- Garnish with fresh strawberries before serving
