Steak Burritos

Ingredients
  

Steak and Marinade
  • 1.5 lbs Skirt Steak or Flank Steak
  • 1/4 cup Soy Sauce
  • 2 cloves Garlic minced
  • 1/4 cup Pineapple Juice
  • 1 tsp Dried Oregano
  • 1 tsp Ground Cumin
  • 1/2 tsp White Pepper
  • 1/2 tsp Onion Powder
  • 2 tbsp Fresh Cilantro chopped
Burrito Assembly
  • 4 large Flour Tortillas
  • 2 cups Cooked Mexican Rice
  • 1 cup Black Beans or Refried Beans
  • 1 cup Shredded Cheese Mexican Blend
  • 1/2 cup Guacamole
  • 1/2 cup Salsa Verde or Pico de Gallo

Method
 

Marinating and Grilling
  1. In a large bowl, combine soy sauce, garlic, pineapple juice, and spices.
  2. Add the steak and cilantro, ensuring the meat is well coated. Marinate for at least 2 hours.
  3. Preheat your grill or cast-iron skillet to high heat.
  4. Grill the steak for 3-4 minutes per side for medium doneness.
  5. Let the steak rest for 10 minutes, then slice thinly against the grain.
Assembly
  1. Warm the tortillas until pliable.
  2. Layer the rice, beans, steak, cheese, guacamole, and salsa in the center of each tortilla.
  3. Fold in the sides and roll up tightly.
  4. Optional: Sear the rolled burrito in a hot pan for 30 seconds per side to seal and crisp.
