Ingredients
  

Pasta and Sauce
  • 18 jumbo pasta shells
  • 24 oz marinara sauce
  • 1 cup shredded mozzarella
  • 1/4 cup grated Parmesan cheese
Filling
  • 15 oz ricotta cheese
  • 10 oz frozen spinach thawed and drained
  • 1 egg lightly beaten
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic minced
  • 1 tsp Italian seasoning

Method
 

Prepare Pasta
  1. Cook pasta shells according to package directions until al dente
  2. Drain and rinse with cold water to stop cooking
  3. Set aside to cool
Make Filling
  1. Squeeze excess moisture from spinach
  2. In a bowl, combine ricotta, spinach, egg, Parmesan, garlic, and seasoning
  3. Mix until well combined
Assemble Shells
  1. Preheat oven to 375°F
  2. Spread 1 cup marinara sauce in baking dish
  3. Fill each shell with ricotta mixture using a spoon
  4. Arrange shells in baking dish seam-side up
Bake
  1. Top with remaining sauce and mozzarella cheese
  2. Cover with foil and bake for 25 minutes
  3. Remove foil and bake 10 more minutes until bubbly
  4. Let stand 5 minutes before serving
