Spicy Black Bean Burgers with Avocado Crema

Ingredients
  

For burgers:
  • - 2 cans 15oz/425g black beans, rinsed and drained
  • - 1/2 cup corn kernels fresh or frozen
  • - 1/2 cup breadcrumbs
  • - 1/4 cup red onion finely chopped
  • - 1 jalapeño seeded and minced
  • - 2 garlic cloves minced
  • - 1 tsp cumin
  • - 1 tsp chili powder
  • - 1/2 tsp smoked paprika
  • - 1 egg
  • - Salt and pepper to taste
  • - 2 tbsp olive oil
For avocado crema:
  • - 1 ripe avocado
  • - 1/4 cup Greek yogurt
  • - 1 tbsp lime juice
  • - 1 garlic clove
  • - Salt to taste

Method
 

  1. Mash black beans in bowl, leaving some texture. Add corn, breadcrumbs, onion, jalapeño, garlic, spices, egg, salt and pepper. Mix well.
  2. Form into 6 patties. Chill 15 minutes.
  3. Make crema: Blend all ingredients until smooth.
  4. Heat oil in skillet over medium heat. Cook patties 4-5 minutes per side until crispy.
  5. Serve on buns with avocado crema, lettuce, and tomato.

Notes

• For vegan: Use flax egg and vegan yogurt
• Gluten-free: Use GF breadcrumbs
• Baking option: 400°F (200°C) for 20 minutes, flip halfway
• Patties freeze well before cooking
