Slow Cooker Pepper Steak a Comforting Classic

Tender strips of beef simmered with bell peppers and onions in a savory soy-ginger sauce.

Ingredients
  

Main
  • 1.5 lbs beef sirloin sliced into strips
  • 2 bell peppers green and red, sliced
  • 1 onion sliced
  • 1/2 cup beef broth
  • 1/4 cup soy sauce
  • 1 tbsp sugar
  • 1 tsp ginger minced
  • 1 clove garlic minced

Method
 

Prep
  1. Place beef, onion, broth, soy sauce, sugar, ginger, and garlic in the slow cooker.
Cook
  1. Cook on Low for 5-6 hours until beef is tender.
Add Peppers
  1. Add bell peppers during the last hour of cooking to keep them crisp-tender.
Thicken
  1. Optional: Mix 1 tbsp cornstarch with water and stir in to thicken the sauce before serving.
