Slow Cooker Garlic Butter Beef Bites Potatoes

Ingredients
  

Beef Bites
  • 1.5 lbs beef sirloin cut into bite-sized pieces
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp smoked paprika
Garlic Butter Sauce
  • 6 tbsp unsalted butter
  • 5 cloves garlic minced
  • 1 tbsp fresh parsley chopped
  • 1 tsp dried thyme
  • 1/2 tsp red pepper flakes optional
Potatoes and Vegetables
  • 1.5 lbs baby Yukon gold potatoes halved
  • 1 large onion sliced
  • 2 cups baby carrots
  • Salt and pepper to taste

Method
 

Prepare the Beef
  1. In a medium bowl, toss the beef bites with olive oil, salt, pepper, and smoked paprika until evenly coated.
  2. Set aside while preparing other ingredients.
Prepare Potatoes and Vegetables
  1. Place halved baby potatoes, sliced onion, and baby carrots in the slow cooker.
  2. Season with a pinch of salt and pepper, tossing to combine.
Make Garlic Butter Sauce
  1. In a small saucepan over medium heat, melt the butter.
  2. Add minced garlic, dried thyme, and red pepper flakes if using.
  3. Cook for 2-3 minutes until fragrant, stirring frequently.
  4. Remove from heat and stir in chopped parsley.
Assemble and Cook
  1. Add the seasoned beef bites on top of the vegetables in the slow cooker.
  2. Pour the garlic butter sauce evenly over the beef and vegetables.
  3. Cover and cook on low for 4 hours or until beef is tender and potatoes are cooked through.
Finish and Serve
  1. Carefully stir the beef and vegetables to coat with the garlic butter sauce.
  2. Adjust seasoning with salt and pepper if needed.
  3. Serve hot, garnished with additional fresh parsley if desired.
