Prepare the Beef
- In a medium bowl, toss the beef bites with olive oil, salt, pepper, and smoked paprika until evenly coated.
- Set aside while preparing other ingredients.
Prepare Potatoes and Vegetables
- Place halved baby potatoes, sliced onion, and baby carrots in the slow cooker.
- Season with a pinch of salt and pepper, tossing to combine.
Make Garlic Butter Sauce
- In a small saucepan over medium heat, melt the butter.
- Add minced garlic, dried thyme, and red pepper flakes if using.
- Cook for 2-3 minutes until fragrant, stirring frequently.
- Remove from heat and stir in chopped parsley.
Assemble and Cook
- Add the seasoned beef bites on top of the vegetables in the slow cooker.
- Pour the garlic butter sauce evenly over the beef and vegetables.
- Cover and cook on low for 4 hours or until beef is tender and potatoes are cooked through.
Finish and Serve
- Carefully stir the beef and vegetables to coat with the garlic butter sauce.
- Adjust seasoning with salt and pepper if needed.
- Serve hot, garnished with additional fresh parsley if desired.
