Slow Cooker Creamy Sausage Tortellini Soup

Ingredients
  

For the Soup
  • 1 lb Italian sausage mild or hot, casings removed
  • 1 large onion chopped
  • 2 cloves garlic minced
  • 1 28 oz can diced tomatoes, undrained
  • 6 cups chicken broth low sodium
  • 2 carrots peeled and diced
  • 2 celery stalks diced
  • 1 tsp dried Italian seasoning
  • 1/2 tsp red pepper flakes optional
  • Salt and freshly ground black pepper to taste
  • 1 19 oz package refrigerated or frozen cheese tortellini
  • 5 oz fresh spinach
  • 1/2 cup heavy cream
For Garnish (Optional)
  • Freshly grated Parmesan cheese
  • Fresh parsley or basil chopped

Method
 

Brown Sausage
  1. In a large skillet, brown Italian sausage over medium-high heat, breaking it up. Drain excess grease. Transfer to slow cooker.
Combine Ingredients
  1. Add onion, garlic, diced tomatoes (undrained), chicken broth, carrots, celery, Italian seasoning, and red pepper flakes (if using) to the slow cooker. Stir to combine.
Slow Cook
  1. Cover and cook on LOW for 6-8 hours or on HIGH for 3-4 hours.
Add Tortellini & Spinach
  1. During the last 15-30 minutes of cooking (check tortellini package for exact time), stir in tortellini and fresh spinach. Cook until tortellini is tender and spinach is wilted.
Stir in Cream & Serve
  1. Just before serving, stir in heavy cream. Taste and adjust seasonings. Serve hot, garnished with Parmesan and fresh herbs.

Notes

Browning the sausage is crucial for flavor. Adjust spice level to your preference. Add tortellini and spinach at the end to prevent mushiness. This soup freezes well, but add tortellini and cream upon reheating.
