Ingredients
  

Filling
  • 2 lbs boneless chicken thighs
  • 2 tbsp olive oil
  • 1 tsp thyme
  • Salt and pepper
Vegetables
  • 3 carrots diced
  • 2 celery stalks chopped
  • 1 cup frozen peas
  • 1 cup pearl onions
Sauce
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 1/4 cup flour
  • 2 tsp poultry seasoning
Topping
  • 1 sheet puff pastry
  • 1 egg beaten
  • 2 tbsp fresh parsley

Method
 

Sear Chicken
  1. Pat chicken dry, season
  2. Sear in oil until golden
  3. Transfer to slow cooker
Add Vegetables
  1. Sauté carrots and celery
  2. Add to slow cooker
  3. Mix in peas and onions
Make Sauce
  1. Whisk broth, cream and flour
  2. Pour over ingredients
  3. Cook on low 4 hours
Finish
  1. Top with puff pastry
  2. Brush with egg wash
  3. Bake at 400°F for 20 minutes
