Slow Cooker Chicken Burritos

Ingredients
  

Main Ingredients
  • 1.5 lbs boneless skinless chicken breasts
  • 1 cup salsa
  • 1 cup black beans drained and rinsed
  • 1 cup corn kernels
  • 1 packet taco seasoning
  • 1/2 cup chicken broth
  • 6 large flour tortillas
  • 1 cup shredded cheddar cheese
  • 1 cup cooked rice
Optional Toppings
  • Sour cream
  • Chopped cilantro
  • Sliced avocado
  • Salsa
  • Lime wedges

Method
 

Instructions
  1. Place chicken breasts in the slow cooker.
  2. Sprinkle taco seasoning over the chicken.
  3. Pour salsa and chicken broth over the chicken.
  4. Add black beans and corn on top.
  5. Cover and cook on low for 4 hours or high for 2 hours until chicken is tender.
  6. Remove chicken from slow cooker and shred with two forks.
  7. Return shredded chicken to the slow cooker and stir to combine with the juices and veggies.
  8. Lay out tortillas and spoon some cooked rice, shredded chicken mixture, and cheddar cheese onto each tortilla.
  9. Roll up the tortillas into burritos.
  10. Serve immediately with optional toppings like sour cream, cilantro, avocado, salsa, and lime wedges.
