- Peel and cube the sweet potatoes into uniform 1-inch pieces to ensure even cooking.
- Slice the Italian sausage into 1/2-inch rounds and wash the broccoli florets thoroughly.
- In a large bowl, combine the sweet potatoes and broccoli with olive oil, garlic powder, smoked paprika, dried thyme, salt, and pepper. Toss well to coat evenly.
Cooking
- Spread the sweet potatoes and broccoli mixture evenly on the prepared sheet pan, leaving space for the sausage slices.
- Add the sliced sausage to the sheet pan, distributing them evenly among the vegetables.
- Place the sheet pan in the preheated oven and roast for 25-30 minutes, stirring halfway through to ensure even browning and cooking.
- Check that the sweet potatoes are tender when pierced with a fork and the sausage is fully cooked and browned.
Finishing
- Remove the sheet pan from the oven and sprinkle the red pepper flakes if using, then garnish with freshly chopped parsley before serving.
