Sheet Pan Roasted Sweet Potatoes, Sausage, and Broccoli

Ingredients
  

For the Main Dish
  • 2 large sweet potatoes peeled and cut into 1-inch cubes
  • 1 pound Italian sausage links sliced into 1/2-inch rounds
  • 3 cups broccoli florets
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Salt and black pepper to taste
For the Seasoning
  • 1 teaspoon dried thyme
  • 1/2 teaspoon red pepper flakes optional
  • 1 tablespoon fresh parsley chopped (for garnish)

Method
 

Preparation
  1. Preheat the oven to 425°F (220°C) and line a large sheet pan with parchment paper or foil for easy cleanup.
  2. Peel and cube the sweet potatoes into uniform 1-inch pieces to ensure even cooking.
  3. Slice the Italian sausage into 1/2-inch rounds and wash the broccoli florets thoroughly.
  4. In a large bowl, combine the sweet potatoes and broccoli with olive oil, garlic powder, smoked paprika, dried thyme, salt, and pepper. Toss well to coat evenly.
Cooking
  1. Spread the sweet potatoes and broccoli mixture evenly on the prepared sheet pan, leaving space for the sausage slices.
  2. Add the sliced sausage to the sheet pan, distributing them evenly among the vegetables.
  3. Place the sheet pan in the preheated oven and roast for 25-30 minutes, stirring halfway through to ensure even browning and cooking.
  4. Check that the sweet potatoes are tender when pierced with a fork and the sausage is fully cooked and browned.
Finishing
  1. Remove the sheet pan from the oven and sprinkle the red pepper flakes if using, then garnish with freshly chopped parsley before serving.
