Ingredients
  

Cookie Dough
  • 1 cup unsalted butter softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 2 1/4 cups all-purpose flour
  • 3/4 cup dark cocoa powder
  • 1 tsp baking soda
  • 1/2 tsp salt
Add-ins
  • 1 cup dark chocolate chunks
  • 1/2 cup caramel bits
  • 1 tsp flaky sea salt for topping

Method
 

Prepare Dough
  1. Cream together softened butter and both sugars until light and fluffy
  2. Beat in eggs one at a time, then add vanilla extract
  3. In separate bowl, whisk together flour, cocoa, baking soda and salt
  4. Gradually mix dry ingredients into wet ingredients until just combined
  5. Fold in dark chocolate chunks and caramel bits
  6. Cover and chill dough for at least 30 minutes
Bake Cookies
  1. Preheat oven to 350°F and line baking sheets with parchment
  2. Scoop 2-tablespoon portions of dough and roll into balls
  3. Place on prepared sheets 2 inches apart
  4. Bake for 10-12 minutes until edges are set but centers appear soft
  5. Immediately sprinkle with flaky sea salt after removing from oven
  6. Let cool on baking sheet for 5 minutes before transferring to wire rack
