Prepare Dough
- Cream together softened butter and both sugars until light and fluffy
- Beat in eggs one at a time, then add vanilla extract
- In separate bowl, whisk together flour, cocoa, baking soda and salt
- Gradually mix dry ingredients into wet ingredients until just combined
- Fold in dark chocolate chunks and caramel bits
- Cover and chill dough for at least 30 minutes
Bake Cookies
- Preheat oven to 350°F and line baking sheets with parchment
- Scoop 2-tablespoon portions of dough and roll into balls
- Place on prepared sheets 2 inches apart
- Bake for 10-12 minutes until edges are set but centers appear soft
- Immediately sprinkle with flaky sea salt after removing from oven
- Let cool on baking sheet for 5 minutes before transferring to wire rack
