Ingredients
  

For the Salmon
  • 1 lb salmon fillets skin removed
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1/2 tsp ground cumin
  • 1/2 tsp paprika
  • 1/4 tsp cayenne pepper optional
  • Salt and black pepper to taste
For the Slaw
  • 2 cups shredded cabbage green or red
  • 1/2 cup shredded carrots
  • 1/4 cup chopped fresh cilantro
  • 2 tbsp lime juice
  • 1 tbsp olive oil
  • Salt and pepper to taste
For the Zesty Crema
  • 1/2 cup Greek yogurt or sour cream
  • 1 tbsp lime juice
  • 1 tsp hot sauce optional
  • Salt to taste
For Assembly
  • 8-12 small corn or flour tortillas
  • Optional toppings: avocado slices pickled red onions, cotija cheese

Method
 

Prepare the Salmon
  1. Pat salmon fillets dry. In a small bowl, combine chili powder, cumin, paprika, cayenne pepper (if using), salt, and black pepper. Rub the spice mixture over both sides of the salmon.
  2. Heat olive oil in a large non-stick skillet over medium-high heat. Add salmon and cook for 3-5 minutes per side, or until cooked through and flakes easily with a fork. Remove from skillet and flake into bite-sized pieces.
Prepare the Slaw
  1. In a medium bowl, combine shredded cabbage, carrots, and cilantro. In a small bowl, whisk together lime juice, olive oil, salt, and pepper. Pour dressing over slaw and toss to combine.
Prepare the Zesty Crema
  1. In a small bowl, whisk together Greek yogurt (or sour cream), lime juice, hot sauce (if using), and salt until smooth.
Assemble the Tacos
  1. Warm tortillas according to package directions. Fill each tortilla with flaked salmon, a generous spoonful of slaw, and a drizzle of zesty crema. Add any optional toppings as desired.
  2. Serve immediately and enjoy!

Notes

For extra flavor, you can grill or bake the salmon instead of pan-frying. Adjust the spice level to your preference by adding more or less cayenne pepper and hot sauce.
