Ingredients
  

The Salmon
  • 2 salmon fillets
  • 1 tbsp olive oil
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • Salt and pepper
The Bowl
  • 2 cups cooked white or brown rice
  • 1 avocado sliced
  • 1 cucumber sliced
  • 1/4 cup edamame shelled
  • Sesame seeds for garnish
Spicy Mayo
  • 2 tbsp mayonnaise
  • 1 tsp sriracha
  • 1 tsp soy sauce

Method
 

Cook Salmon
  1. Season salmon fillets with paprika, garlic powder, salt, and pepper.
  2. Heat oil in a skillet over medium-high heat. Cook salmon for 4-5 minutes per side until cooked through.
Assemble
  1. Divide rice into two bowls.
  2. Top with salmon, avocado, cucumber, and edamame.
  3. Mix mayo ingredients and drizzle over the bowls.
  4. Sprinkle with sesame seeds.
