Ingredients
  

Roasted Garlic
  • 2 whole heads garlic
  • 1 tablespoon olive oil
  • Pinch of salt
Soup Base
  • 2 tablespoons butter
  • 1 large onion diced
  • 2 pounds potatoes peeled and cubed
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1 teaspoon thyme
  • Salt and pepper to taste
Garnishes
  • Crispy bacon bits
  • Chopped chives
  • Shredded cheddar cheese
  • Sour cream

Method
 

Roast Garlic
  1. Preheat oven to 400°F
  2. Slice top off garlic heads to expose cloves
  3. Drizzle with olive oil, sprinkle with salt
  4. Wrap in foil and roast for 30-35 minutes until soft and golden
  5. Let cool, then squeeze out softened garlic
Prepare Soup
  1. In a large pot, melt butter over medium heat
  2. Add onion and cook until translucent (5-7 minutes)
  3. Add potatoes, broth, and thyme
  4. Bring to boil, then reduce heat and simmer until potatoes are tender (15-20 minutes)
Blend and Finish
  1. Add roasted garlic to pot
  2. Using immersion blender, puree soup until smooth
  3. Stir in heavy cream and heat through
  4. Season with salt and pepper to taste
Serve
  1. Ladle into bowls
  2. Top with desired garnishes
  3. Serve with crusty bread for dipping
