Ingredients
  

Brownie Layer
  • 1 cup unsalted butter melted
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1/2 teaspoon salt
  • 1 tablespoon red food coloring
  • 1 teaspoon white vinegar
Cheesecake Layer
  • 16 oz cream cheese softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract

Method
 

Prepare Brownie Batter
  1. Preheat oven to 350°F and line a 9x13 inch pan with parchment paper.
  2. In a large bowl, mix melted butter and sugar until combined.
  3. Add eggs one at a time, then vanilla, food coloring, and vinegar.
  4. In a separate bowl, whisk together flour, cocoa powder, and salt.
  5. Gradually add dry ingredients to wet ingredients and mix until combined.
Prepare Cheesecake Layer
  1. In a medium bowl, beat cream cheese until smooth.
  2. Add sugar and mix until combined.
  3. Add eggs one at a time, then vanilla, mixing until smooth.
Assemble and Bake
  1. Spread brownie batter evenly in prepared pan.
  2. Drop spoonfuls of cheesecake mixture over brownie layer and swirl with a knife.
  3. Bake for 35-40 minutes until edges are set and center is slightly jiggly.
  4. Cool completely before cutting into squares.
