Ingredients
  

Crust
  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 6 tbsp melted butter
Cheesecake Filling
  • 24 oz cream cheese softened
  • 1 cup granulated sugar
  • 1 cup pumpkin puree
  • 3 eggs
  • 1 tsp vanilla extract
  • 1 tsp pumpkin spice blend
Streusel Topping
  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/4 cup cold butter cubed
  • 1 tsp cinnamon

Method
 

Prepare Crust
  1. Combine graham crumbs, sugar, and melted butter
  2. Press firmly into 9-inch springform pan
  3. Bake at 350°F for 10 minutes
Make Filling
  1. Beat cream cheese until smooth
  2. Add sugar and pumpkin, beat until creamy
  3. Mix in eggs one at a time
  4. Stir in vanilla and spices
Assemble & Bake
  1. Pour filling over crust
  2. Combine streusel ingredients until crumbly
  3. Sprinkle topping over filling
  4. Bake at 325°F for 55-60 minutes
Cooling & Serving
  1. Cool in oven with door cracked
  2. Refrigerate overnight before serving
  3. Garnish with whipped cream and caramel
