Ingredients
  

Crust
  • 2 cups graham cracker crumbs
  • 1/2 cup melted butter
  • 1/4 cup brown sugar
  • 1 tsp pumpkin pie spice
Filling
  • 24 oz cream cheese room temperature
  • 1 1/4 cups pumpkin puree
  • 1 cup brown sugar
  • 3 large eggs
  • 1/4 cup sour cream
  • 2 tbsp cornstarch
  • 2 tsp vanilla extract
  • 1 1/2 tsp cinnamon
Streusel
  • 3/4 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/3 cup cold butter cubed
  • 1/2 cup chopped pecans
  • 1 tsp cinnamon
Topping
  • Whipped cream
  • Caramel sauce
  • Candied pecans

Method
 

Prepare Crust
  1. Preheat oven to 325°F
  2. Mix crumbs, butter, sugar and spice
  3. Press into 9-inch springform pan
  4. Bake 10 minutes, cool
Make Filling
  1. Beat cream cheese until smooth
  2. Add pumpkin, sugar, eggs one at a time
  3. Mix in sour cream, cornstarch, vanilla, cinnamon
  4. Pour over crust
Add Streusel
  1. Combine flour, sugar, cinnamon
  2. Cut in butter until crumbly
  3. Stir in pecans
  4. Sprinkle over filling
Bake
  1. Bake 70-75 minutes until center jiggles slightly
  2. Turn off oven, leave door ajar for 1 hour
  3. Chill overnight before serving
