Ingredients
  

Crust
  • 1 1/4 cups all-purpose flour
  • 1/2 tsp salt
  • 1/2 cup cold butter cubed
  • 3-4 tbsp ice water
Filling
  • 15 oz pumpkin puree
  • 3/4 cup brown sugar
  • 2 large eggs
  • 1 cup heavy cream
  • 1 tsp cinnamon
  • 1/2 tsp ginger
  • 1/4 tsp nutmeg
  • 1/4 tsp cloves
Topping
  • 1/2 cup pecans chopped
  • 1/4 cup caramel sauce
  • 1 tbsp maple syrup
  • Pinch sea salt

Method
 

Crust
  1. Mix flour and salt
  2. Cut in butter until pea-sized
  3. Add water, form dough, chill 30 min
  4. Roll and fit into pie dish
Filling
  1. Whisk pumpkin, sugar and eggs
  2. Add spices and cream
  3. Pour into crust
Bake
  1. Bake at 425°F for 15 min
  2. Reduce to 350°F, bake 40 min
Topping
  1. Toast pecans with maple syrup
  2. Drizzle pie with caramel
  3. Top with pecans and sea salt
