Ingredients
  

Gnocchi
  • 2 lbs russet potatoes
  • 1 1/2 cups all-purpose flour
  • 1 egg lightly beaten
  • 1 tsp salt
Sauce
  • 1/2 cup unsalted butter
  • 1/4 cup fresh sage leaves
  • 2 cloves garlic minced
  • 1/2 cup grated Parmesan cheese
Finish
  • Fresh parsley chopped
  • Extra Parmesan for serving
  • Black pepper to taste

Method
 

Prepare Potatoes
  1. Bake potatoes at 400°F until tender, about 1 hour
  2. Let cool slightly, then peel and rice or mash
  3. Spread on baking sheet to cool completely
Make Dough
  1. Form cooled potatoes into a mound on work surface
  2. Make well in center, add egg and salt
  3. Gradually incorporate flour until dough forms
  4. Knead gently until smooth, about 2 minutes
Shape Gnocchi
  1. Divide dough into quarters
  2. Roll each piece into long rope, about 3/4-inch thick
  3. Cut into 1-inch pieces
  4. Optional: roll over fork tines for ridges
Cook and Serve
  1. Boil gnocchi in salted water until they float, 2-3 minutes
  2. Meanwhile, melt butter with sage and garlic
  3. Drain gnocchi, add to sauce, toss to coat
  4. Serve with Parmesan and black pepper
