Pizza Grilled Cheese Recipe: Busy Mama's Go-To Recipes

Ingredients
  

For the Sandwich
  • 4 slices thick white or sourdough bread
  • 2 tablespoons unsalted butter softened
  • 1/3 cup pizza sauce or marinara
  • 1 cup shredded mozzarella cheese
  • 20-24 slices pepperoni
  • 1/2 teaspoon Italian seasoning
  • 1/4 teaspoon garlic powder
Optional Toppings
  • 1/4 cup sliced black olives
  • 1/4 cup diced green bell pepper
  • Red pepper flakes to taste
  • Fresh basil leaves for garnish

Method
 

Preparation
  1. Spread softened butter evenly on one side of each bread slice. This is the side that will go face-down in the pan.
  2. On the unbuttered side of two bread slices, spread a generous layer of pizza sauce, leaving a small border around the edges.
  3. Sprinkle Italian seasoning and garlic powder over the sauce.
Assembly
  1. Layer half the mozzarella cheese over the sauce on each bread slice.
  2. Arrange pepperoni slices evenly over the cheese, then add any optional toppings you like.
  3. Top with the remaining mozzarella cheese, then place the other bread slice on top, buttered side facing out.
Cooking
  1. Heat a skillet or griddle over medium-low heat. Place the sandwiches buttered-side down in the pan.
  2. Cook for 3-4 minutes until the bottom is golden brown and crispy. Press gently with a spatula.
  3. Carefully flip the sandwiches and cook for another 3-4 minutes until the second side is golden and the cheese is fully melted. Serve immediately.
