Pizza Grilled Cheese Recipe

Ingredients
  

For the Sandwich Base
  • 4 slices thick artisan bread sourdough or Italian loaf
  • 2 tablespoons butter or mayonnaise for spreading
  • 1 cup shredded low-moisture mozzarella cheese
  • 1/4 cup thick pizza sauce or marinara warmed slightly
For the Pizza Filling
  • 16 slices high-quality pepperoni
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 2 tablespoons grated Parmesan cheese optional

Method
 

Preparation
  1. Generously spread butter or a thin layer of mayonnaise on one side of each slice of bread.
  2. Warm the pizza sauce slightly in the microwave or on the stove to prevent it from lowering the sandwich's internal temperature.
Assembly
  1. Place two slices of bread, butter-side down, on a cutting board or clean surface.
  2. Layer half of the mozzarella cheese evenly over the two slices of bread to create a protective barrier.
  3. Spread the warmed pizza sauce evenly over the cheese layer.
  4. Arrange the pepperoni slices over the sauce, and sprinkle with dried oregano, garlic powder, and Parmesan cheese if using.
  5. Top with the remaining mozzarella cheese and place the remaining slices of bread on top, butter-side up.
Cooking
  1. Heat a large skillet or griddle over medium-low heat.
  2. Carefully transfer the assembled sandwiches to the skillet.
  3. Cook slowly for 4-5 minutes, until the bottom is deeply golden and crispy.
  4. Carefully flip the sandwiches and cook for another 4-5 minutes, until the second side is golden and the cheese is completely melted and bubbling.
  5. Remove from heat, let rest for 1 minute, slice, and serve immediately.
