Pineapple Chicken and Rice

Ingredients
  

For the Chicken
  • 1.5 lbs chicken thighs boneless, skinless
  • 2 tbsp soy sauce
  • 1 tbsp cornstarch
  • 1 tsp ginger grated
  • 2 cloves garlic minced
For the Sauce
  • 1 cup pineapple juice
  • 1/4 cup soy sauce
  • 2 tbsp brown sugar
  • 1 tbsp rice vinegar
  • 1 tbsp cornstarch
  • 1 tsp ginger grated
  • 2 cloves garlic minced
For Stir-Fry
  • 2 tbsp vegetable oil
  • 1 onion sliced
  • 1 red bell pepper sliced
  • 2 cups pineapple chunks
  • 3 cups cooked rice
  • 2 green onions sliced
  • 1 tbsp sesame seeds

Method
 

Marinate Chicken
  1. Cut chicken into bite-sized pieces.
  2. Combine with soy sauce, cornstarch, ginger, and garlic.
  3. Let marinate for at least 15 minutes while preparing other ingredients.
Prepare Sauce
  1. Whisk together pineapple juice, soy sauce, brown sugar, rice vinegar, cornstarch, ginger, and garlic.
  2. Set aside until ready to use.
Cook Chicken
  1. Heat 1 tbsp oil in a large skillet or wok over high heat.
  2. Add chicken in a single layer and cook until browned and cooked through, about 5-7 minutes.
  3. Remove chicken from skillet and set aside.
Stir-Fry Vegetables
  1. Add remaining oil to skillet.
  2. Add onion and bell pepper. Stir-fry for 2-3 minutes until slightly softened.
  3. Add pineapple chunks and cook for another 2 minutes.
Combine and Serve
  1. Return chicken to skillet with vegetables.
  2. Give sauce a quick stir and pour over chicken and vegetables.
  3. Cook, stirring constantly, until sauce thickens, about 2-3 minutes.
  4. Serve over cooked rice, garnished with green onions and sesame seeds.
