Preparation
- Preheat oven to 375°F (190°C).
- In a large bowl, cream together butter, sugars, and peanut butter until fluffy.
- Beat in the egg and vanilla.
Mixing
- Whisk together flour, baking soda, and salt. Gradually add to the wet ingredients.
- Roll the dough into 1-inch balls and place in an ungreased mini muffin tin.
Finishing
- Bake for 8-10 minutes until lightly golden.
- Immediately after removing from the oven, press a mini peanut butter cup into the center of each cookie.
- Let cool completely before removing from the tin.
