Peanut Butter Cup Cookies

Ingredients
  

For the Dough
  • 1/2 cup butter softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup creamy peanut butter
  • 1 large egg
  • 1 tsp vanilla extract
Dry Ingredients
  • 1.5 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
The Surprise
  • 24 mini peanut butter cups unwrapped

Method
 

Preparation
  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, cream together butter, sugars, and peanut butter until fluffy.
  3. Beat in the egg and vanilla.
Mixing
  1. Whisk together flour, baking soda, and salt. Gradually add to the wet ingredients.
  2. Roll the dough into 1-inch balls and place in an ungreased mini muffin tin.
Finishing
  1. Bake for 8-10 minutes until lightly golden.
  2. Immediately after removing from the oven, press a mini peanut butter cup into the center of each cookie.
  3. Let cool completely before removing from the tin.
