Preparation
- Preheat oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan.
- In a large bowl, whisk together the flour, both sugars, baking soda, baking powder, salt, cinnamon, and nutmeg.
Cooking
- In a separate bowl, whisk together the melted butter, vegetable oil, eggs, and vanilla extract.
- Gently stir in the shredded zucchini and diced peaches.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
- Pour the batter into the prepared loaf pan and spread evenly.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
Finishing
- Let the bread cool in the pan for 10-15 minutes before transferring to a wire rack to cool completely.
- Slice and serve warm.
