Ingredients
  

For the Bread
  • 1 1/2 cups all-purpose flour
  • 1/2 cup brown sugar packed
  • 1/2 cup granulated sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 cup shredded zucchini
  • 1 cup diced peaches
  • 1/4 cup unsalted butter melted
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan.
  2. In a large bowl, whisk together the flour, both sugars, baking soda, baking powder, salt, cinnamon, and nutmeg.
Cooking
  1. In a separate bowl, whisk together the melted butter, vegetable oil, eggs, and vanilla extract.
  2. Gently stir in the shredded zucchini and diced peaches.
  3. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
  4. Pour the batter into the prepared loaf pan and spread evenly.
  5. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
Finishing
  1. Let the bread cool in the pan for 10-15 minutes before transferring to a wire rack to cool completely.
  2. Slice and serve warm.
