- Mix oats, milk, yogurt, chia seeds
- Refrigerate overnight
Make Peach Compote
- Combine peaches, honey, lemon, cinnamon
- Cook 5 minutes until syrupy
- Cool completely
Make Topping
- Combine flour and sugar
- Cut in butter until crumbly
- Stir in pecans
- Bake at 350°F for 15 minutes
Assemble
- Layer oats and compote in jars
- Top with cobbler crumble
- Add ice cream if desired
