Ingredients
  

Oat Base
  • 1 cup rolled oats
  • 1 cup milk
  • 1/4 cup Greek yogurt
  • 1 tbsp chia seeds
Peach Layer
  • 2 ripe peaches diced
  • 1 tbsp honey
  • 1 tsp lemon juice
  • 1/2 tsp cinnamon
Cobbler Topping
  • 1/4 cup flour
  • 2 tbsp brown sugar
  • 2 tbsp cold butter
  • 1/4 cup chopped pecans
Assembly
  • Vanilla ice cream
  • Caramel sauce
  • Mint leaves

Method
 

Prepare Oats
  1. Mix oats, milk, yogurt, chia seeds
  2. Refrigerate overnight
Make Peach Compote
  1. Combine peaches, honey, lemon, cinnamon
  2. Cook 5 minutes until syrupy
  3. Cool completely
Make Topping
  1. Combine flour and sugar
  2. Cut in butter until crumbly
  3. Stir in pecans
  4. Bake at 350°F for 15 minutes
Assemble
  1. Layer oats and compote in jars
  2. Top with cobbler crumble
  3. Add ice cream if desired
