One Pot Chicken Parmesan Pasta

Ingredients
  

Main Ingredients
  • 1 lb boneless skinless chicken breasts, cubed
  • 2 tbsp olive oil
  • 1 small onion diced
  • 4 cloves garlic minced
  • 1/2 tsp red pepper flakes optional
  • 1 jar 24 oz marinara sauce
  • 2 cups chicken broth
  • 1/2 cup heavy cream or half-and-half
  • 12 oz penne or rigatoni pasta
  • 1/2 cup grated Parmesan cheese
Seasonings
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp tomato paste
For Topping
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp chopped fresh basil or parsley

Method
 

Cook Chicken
  1. Season chicken cubes with salt and pepper
  2. Heat olive oil in large pot or Dutch oven over medium-high heat
  3. Add chicken and cook until browned on all sides, about 5-6 minutes
  4. Remove chicken and set aside
Sauté Aromatics
  1. Add onion to same pot and cook until softened, about 3-4 minutes
  2. Add garlic and red pepper flakes, cook until fragrant, about 1 minute
  3. Stir in tomato paste and cook for 1 minute
Combine and Simmer
  1. Return chicken to pot with any accumulated juices
  2. Add marinara sauce, chicken broth, cream, oregano, and basil
  3. Stir in uncooked pasta, making sure it's submerged in liquid
  4. Bring to boil, then reduce heat to medium-low and cover
  5. Simmer for 15-18 minutes, stirring occasionally, until pasta is al dente
Finish and Serve
  1. Stir in Parmesan cheese until melted and creamy
  2. Top with mozzarella and additional Parmesan
  3. Cover and let stand for 2-3 minutes until cheese melts
  4. Garnish with fresh basil or parsley before serving
