One Pot Chicken Orzo

Ingredients
  

Main Ingredients
  • 1.5 lbs chicken thighs boneless skinless, cubed
  • 1 tbsp olive oil
  • 1 onion diced
  • 3 cloves garlic minced
  • 1 1/2 cups orzo pasta
  • 3 cups chicken broth
  • 1 cup cherry tomatoes halved
  • 1 cup spinach leaves
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp fresh parsley chopped
Seasonings
  • 1 tsp dried oregano
  • 1/2 tsp dried thyme
  • 1/2 tsp paprika
  • Salt and pepper to taste

Method
 

Cook Chicken
  1. Season chicken with salt, pepper, and paprika
  2. Heat oil in large skillet or Dutch oven over medium-high heat
  3. Add chicken and cook until browned on all sides, 5-6 minutes
  4. Remove chicken and set aside
Sauté Aromatics
  1. In same pot, add onion and cook until softened, 3-4 minutes
  2. Add garlic and cook until fragrant, 30 seconds
  3. Add orzo and toast for 1 minute, stirring constantly
Simmer
  1. Return chicken to pot with any accumulated juices
  2. Add broth, oregano, and thyme
  3. Bring to boil, then reduce heat to low
  4. Cover and simmer for 10 minutes, stirring occasionally
Finish Dish
  1. Add cherry tomatoes and spinach
  2. Cook uncovered 3-4 minutes until spinach wilts and liquid is absorbed
  3. Stir in Parmesan cheese and parsley
  4. Season with salt and pepper to taste
  5. Serve immediately
