Ingredients
  

Cheesecake Filling
  • 8 oz cream cheese softened
  • 1/2 cup pumpkin puree
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract
  • 1 tsp pumpkin pie spice
  • 1/2 tsp cinnamon
Binder
  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup almond flour
  • 2 tbsp coconut oil melted
Coating Options
  • 1/2 cup crushed pecans
  • 1/4 cup cinnamon sugar
  • 1/4 cup white chocolate chips melted
  • 1/4 cup dark chocolate melted
Garnish
  • Sea salt flakes
  • Pumpkin spice blend
  • Edible gold dust

Method
 

Prepare Filling
  1. In a large bowl, beat cream cheese until smooth
  2. Add pumpkin puree, maple syrup, vanilla, and spices
  3. Mix until completely combined and creamy
Combine
  1. Add graham cracker crumbs and almond flour
  2. Mix until uniform texture forms
  3. Drizzle in melted coconut oil while mixing
Form Balls
  1. Chill mixture for 15 minutes
  2. Scoop tablespoon-sized portions
  3. Roll into smooth balls between palms
Coat & Chill
  1. Roll balls in preferred coatings
  2. Place on parchment-lined tray
  3. Chill for 1 hour before serving
