Prepare Ingredients
- Dice vegetables uniformly for even cooking
- Pit and halve olives, chop sun-dried tomatoes
- Mince garlic, chop herbs
- Crumble feta cheese
Cook Chicken
- Heat olive oil in large skillet over medium-high heat
- Add ground chicken, breaking up with spoon
- Cook until no longer pink (5-7 minutes)
- Season with salt, pepper, oregano, thyme, and paprika
Add Vegetables
- Push chicken to one side, add more oil if needed
- Add onion, bell pepper, zucchini to empty side
- Sauté vegetables until slightly softened (4-5 minutes)
- Add garlic and cook until fragrant (30 seconds)
Combine and Simmer
- Mix everything together in skillet
- Add olives and sun-dried tomatoes
- Reduce heat to medium, cook for 3-4 minutes
- Adjust seasoning if needed
Finish and Serve
- Remove from heat, stir in lemon juice
- Top with crumbled feta and fresh parsley
- Serve directly from skillet or transfer to platter
- Accompany with lemon wedges for squeezing over
