Method
Cook Chicken
- Heat olive oil in a large pot over medium-high heat.
- Season chicken with salt and pepper and cook until browned, 5-6 minutes.
- Remove chicken and set aside.
Sauté Aromatics
- Add onion to the pot and cook until softened, 3-4 minutes.
- Add garlic and cook until fragrant, 1 minute.
- Add sun-dried tomatoes and cook for 2 minutes.
Simmer Soup
- Return chicken to pot and add chicken broth, Italian seasoning, and red pepper flakes.
- Bring to boil, then reduce heat and simmer for 15 minutes.
Finish Soup
- Stir in heavy cream and Parmesan cheese until smooth.
- Add spinach and basil and cook until wilted, 2-3 minutes.
- Season with salt and pepper to taste.
Serve
- Ladle into bowls and top with additional Parmesan.
- Serve with crusty bread for dipping.
