Ingredients
  

For the Chicken
  • 4 boneless skinless chicken breasts
  • Salt and freshly ground black pepper to taste
  • 2 tablespoons olive oil
For the Sauce
  • 4 cloves garlic minced
  • 1/3 cup sun-dried tomatoes packed in oil chopped
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 1 teaspoon fresh thyme leaves or 1/2 teaspoon dried thyme
  • Optional: splash of white wine or chicken broth for deglazing

Preparation
  1. Pat the chicken breasts dry with paper towels and season both sides generously with salt and pepper.
  2. Gather and measure all sauce ingredients for easy access.
Cooking the Chicken
  1. Heat olive oil in a large skillet over medium-high heat until hot and shimmering.
  2. Add the chicken breasts carefully and sear for 5-6 minutes per side until golden and cooked through.
  3. Remove chicken from the skillet and set aside on a warm plate.
Making the Sauce
  1. Reduce heat to medium and add minced garlic to the same skillet; sauté for about 1 minute until fragrant.
  2. Add chopped sun-dried tomatoes and cook for another minute, stirring frequently.
  3. Optional: Pour in a splash of white wine or chicken broth to deglaze the pan, scraping up browned bits.
  4. Stir in heavy cream and bring to a gentle simmer.
  5. Add grated Parmesan cheese, stirring until the sauce thickens and becomes smooth.
  6. Season the sauce with salt and pepper to taste.
Finishing the Dish
  1. Return the chicken breasts to the skillet, nestling them in the creamy sauce.
  2. Sprinkle fresh thyme leaves over the chicken.
  3. Cover and simmer gently for 4-5 minutes to meld flavors and finish cooking.
  4. Serve immediately over pasta, rice, or sautéed vegetables, garnished with extra Parmesan or fresh herbs if desired.
