Longhorn Style Parmesan Crusted Chicken

Ingredients
  

For the Chicken
  • 4 boneless skinless chicken breasts
  • Salt and freshly ground black pepper to taste
  • 2 tablespoons olive oil
For the Parmesan Crust
  • ½ cup grated Parmesan cheese
  • ¼ cup mayonnaise
  • 2 cloves garlic minced
  • 1 tablespoon fresh parsley chopped
  • 1 teaspoon dried Italian seasoning
  • ¼ teaspoon onion powder
  • Pinch of red pepper flakes optional

Method
 

  1. Preheat oven to 375°F (190°C). Place each chicken breast between two pieces of plastic wrap and pound to an even ½-inch thickness. Season both sides with salt and pepper.
  2. Heat olive oil in a large oven-safe skillet over medium-high heat. Sear chicken breasts for 3-4 minutes per side until golden brown. Remove from heat.
  3. In a small bowl, combine grated Parmesan cheese, mayonnaise, minced garlic, chopped parsley, Italian seasoning, onion powder, and red pepper flakes (if using). Mix well.
  4. Evenly spread the Parmesan crust mixture over the top of each seared chicken breast.
  5. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until chicken reaches an internal temperature of 165°F (74°C) and the crust is golden brown and bubbly.
  6. Let the chicken rest for 5 minutes before serving. Garnish with extra fresh parsley if desired.

Notes

Use freshly grated Parmesan cheese for best results. Don't skip pounding the chicken to ensure even cooking. Pairs well with mashed potatoes, roasted vegetables, or a fresh salad.
