Sauté Vegetables
- Heat oil in large pot over medium heat
- Sauté onion, carrots, celery until softened
- Add garlic and cook until fragrant
Simmer Soup
- Add chicken broth and bring to boil
- Reduce heat and simmer for 15 minutes
- Add orzo and cook according to package directions
Prepare Lemon-Egg Mixture
- Whisk eggs and lemon juice together
- Ladle in 1 cup hot broth slowly while whisking
- Temper the egg mixture to prevent curdling
Finish Soup
- Return tempered mixture to pot, stirring constantly
- Add chicken and lemon zest
- Heat through but do not boil
- Stir in dill and season to taste
Serve
- Ladle into bowls
- Garnish with additional dill and Parmesan
- Serve with crusty bread
