Ingredients
  

Soup Base
  • 1 tbsp olive oil
  • 1 onion diced
  • 3 carrots sliced
  • 3 celery stalks chopped
  • 2 cloves garlic minced
  • 8 cups chicken broth
Chicken and Orzo
  • 2 cups cooked chicken shredded
  • 1 cup orzo pasta
  • 2 lemons juiced and zested
  • 2 eggs
Finish
  • 1/4 cup fresh dill
  • Salt and pepper to taste
  • Parmesan cheese for serving

Method
 

Sauté Vegetables
  1. Heat oil in large pot over medium heat
  2. Sauté onion, carrots, celery until softened
  3. Add garlic and cook until fragrant
Simmer Soup
  1. Add chicken broth and bring to boil
  2. Reduce heat and simmer for 15 minutes
  3. Add orzo and cook according to package directions
Prepare Lemon-Egg Mixture
  1. Whisk eggs and lemon juice together
  2. Ladle in 1 cup hot broth slowly while whisking
  3. Temper the egg mixture to prevent curdling
Finish Soup
  1. Return tempered mixture to pot, stirring constantly
  2. Add chicken and lemon zest
  3. Heat through but do not boil
  4. Stir in dill and season to taste
Serve
  1. Ladle into bowls
  2. Garnish with additional dill and Parmesan
  3. Serve with crusty bread
