Poppers
  • 1 1/2 cups flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1 cup buttermilk
  • 1 egg
  • 2 tbsp melted butter
  • 1 tbsp lemon zest
  • 1 cup blueberries
Icing
  • 4 oz cream cheese
  • 1/4 cup powdered sugar
  • 2 tbsp milk
  • 1 tsp vanilla
Cooking
  • Butter for pan
  • Maple syrup
  • Powdered sugar
Garnish
  • Fresh blueberries
  • Lemon zest
  • Mint leaves

Method
 

Make Batter
  1. Whisk dry ingredients
  2. Mix wet ingredients separately
  3. Combine gently, fold in blueberries
Cook Poppers
  1. Heat mini muffin pan
  2. Brush with butter
  3. Fill cups 3/4 full
  4. Bake at 375°F for 12 minutes
Make Icing
  1. Beat cream cheese until smooth
  2. Add sugar, milk, vanilla
  3. Whip until fluffy
Serve
  1. Drizzle poppers with icing
  2. Dust with powdered sugar
  3. Garnish with berries and zest
