Korean Spicy Bowls

Ingredients
  

For the Spicy Meat
  • 1 lb ground beef or pork
  • 3 tablespoons gochujang Korean red chili paste
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon honey or brown sugar
  • 3 cloves garlic minced
  • 1 teaspoon fresh ginger grated
  • 1/2 teaspoon black pepper
For the Bowls
  • 3 cups cooked white or brown rice
  • 1 cup shredded carrots
  • 1 cup sliced cucumbers
  • 1 cup fresh spinach or kimchi
  • 2 green onions sliced
  • 1 tablespoon toasted sesame seeds
  • 4 fried eggs optional

Method
 

Cooking the Meat
  1. In a small bowl, whisk together gochujang, soy sauce, sesame oil, honey, garlic, ginger, and pepper to make the sauce.
  2. Heat a large skillet over medium-high heat. Add the ground meat and cook until browned and crumbled, about 5-7 minutes. Drain excess fat.
  3. Pour the sauce over the meat and stir to coat. Cook for another 2-3 minutes until the sauce thickens and the meat is caramelized.
Assembly
  1. Divide the cooked rice among four bowls.
  2. Top each bowl with a generous portion of the spicy meat.
  3. Arrange carrots, cucumbers, and spinach/kimchi around the meat.
  4. Garnish with sliced green onions, sesame seeds, and a fried egg if desired. Serve immediately.
