Ingredients
  

Chicken Marinade
  • 1.5 lbs boneless chicken thighs sliced

  • 2 tbsp gochujang Korean chili paste
  • 1 tbsp sesame oil
  • 2 tbsp brown sugar
  • 4 cloves garlic minced
  • 1 tbsp ginger grated
  • 2 tbsp rice vinegar
Rice Bowl Components
  • 2 cups short-grain rice cooked
  • 1 cucumber julienned
  • 2 carrots julienned
  • 4 eggs soft-boiled or fried
  • 2 green onions sliced
  • 1 tbsp sesame seeds toasted
  • Nori strips for garnish
Gochujang Sauce
  • 3 tbsp gochujang
  • 1 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp honey
  • 1 tsp sesame oil
  • 1 clove garlic minced
Quick Pickled Vegetables
  • 1 cup rice vinegar
  • ½ cup water
  • 2 tbsp sugar
  • 1 tsp salt
  • 1 daikon radish julienned
  • 2 carrots julienned

Method
 

Marinate Chicken
  1. Combine all marinade ingredients in a bowl
  2. Add sliced chicken and toss to coat
  3. Marinate for at least 30 minutes, or up to 4 hours
Prepare Components
  1. Cook rice according to package instructions
  2. Make quick pickles by combining vinegar, water, sugar, and salt
  3. Pour over julienned vegetables and let sit for 20 minutes
  4. Prepare gochujang sauce by whisking all ingredients
  5. Soft-boil or fry eggs to desired doneness
Cook Chicken
  1. Heat a large skillet or wok over high heat
  2. Add marinated chicken in a single layer
  3. Cook for 5-7 minutes without moving to develop sear
  4. Stir-fry until cooked through and caramelized
  5. Remove from heat and let rest
Assemble Bowls
  1. Divide rice among serving bowls
  2. Top with cooked chicken, pickled vegetables, and fresh vegetables
  3. Add an egg to each bowl
  4. Drizzle with gochujang sauce
  5. Garnish with green onions, sesame seeds, and nori
