Ingredients
  

Meatballs
  • 1 pound ground chicken or turkey
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan
  • 1 egg
  • 2 cloves garlic minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
Soup
  • 2 tablespoons olive oil
  • 1 onion diced
  • 2 carrots diced
  • 2 celery stalks diced
  • 3 cloves garlic minced
  • 8 cups chicken broth
  • 1 cup small pasta acini di pepe or orzo
  • 6 ounces fresh spinach
  • Salt and pepper to taste
Garnish
  • Additional Parmesan cheese
  • Fresh parsley chopped

Method
 

Make Meatballs
  1. Combine meatball ingredients in bowl
  2. Form into small (1/2-inch) meatballs
  3. Place on baking sheet and refrigerate while preparing soup
Start Soup
  1. Heat oil in large pot over medium heat
  2. Add onion, carrots, and celery, cook until softened (5-7 minutes)
  3. Add garlic, cook until fragrant (30 seconds)
Simmer
  1. Add broth, bring to simmer
  2. Carefully add meatballs to soup
  3. Simmer until meatballs are cooked through (10-12 minutes)
Finish
  1. Add pasta, cook until al dente (8-10 minutes)
  2. Stir in spinach until wilted
  3. Season with salt and pepper
  4. Serve garnished with Parmesan and parsley
