Ingredients
  

Soup Base
  • 2 tbsp olive oil
  • 1 large onion diced
  • 3 carrots peeled and diced
  • 3 celery stalks diced
  • 4 cloves garlic minced
  • 8 cups chicken broth preferably homemade
  • 1 bay leaf
  • 1 tsp dried thyme or 3 sprigs fresh
  • Salt and pepper to taste
Protein and Pasta
  • 2 cups cooked chicken shredded
  • 1 cup ditalini or small pasta
  • Parmesan rind optional, for depth
Finishing Touches
  • 1/4 cup fresh parsley chopped
  • 2 tbsp lemon juice
  • Grated Parmesan cheese for serving
  • Red pepper flakes optional

Method
 

Sauté Vegetables
  1. Heat olive oil in a large pot over medium heat
  2. Add onion, carrots, and celery—sauté until softened (8-10 minutes)
  3. Add garlic and cook for 1 minute until fragrant
Simmer Soup
  1. Add chicken broth, bay leaf, thyme, and Parmesan rind if using
  2. Bring to a boil, then reduce heat and simmer for 20 minutes
  3. Season with salt and pepper to taste
Add Pasta and Chicken
  1. Add pasta and cook according to package directions until al dente
  2. Stir in shredded chicken and heat through
Finish and Serve
  1. Remove bay leaf and Parmesan rind
  2. Stir in fresh parsley and lemon juice
  3. Adjust seasoning if needed
  4. Serve hot with grated Parmesan and crusty bread
