Sauté Vegetables
- Heat olive oil in a large pot over medium heat
- Add onion, carrots, and celery—sauté until softened (8-10 minutes)
- Add garlic and cook for 1 minute until fragrant
Simmer Soup
- Add chicken broth, bay leaf, thyme, and Parmesan rind if using
- Bring to a boil, then reduce heat and simmer for 20 minutes
- Season with salt and pepper to taste
Add Pasta and Chicken
- Add pasta and cook according to package directions until al dente
- Stir in shredded chicken and heat through
Finish and Serve
- Remove bay leaf and Parmesan rind
- Stir in fresh parsley and lemon juice
- Adjust seasoning if needed
- Serve hot with grated Parmesan and crusty bread
