Method
Prepare Dough
- Whisk together flour, cocoa powder, baking soda, and salt
- In separate bowl, cream butter and sugars until light and fluffy
- Beat in eggs one at a time, then vanilla
- Gradually add dry ingredients to wet ingredients
- Fold in chocolate chips
- Chill dough for 30 minutes
Form Cookies
- Preheat oven to 350°F and line baking sheets with parchment
- Scoop dough into 2-tablespoon portions
- Flatten each portion and place marshmallow in center
- Wrap dough around marshmallow, sealing completely
- Roll balls in granulated sugar
- Place 2 inches apart on baking sheets
Bake and Serve
- Bake for 10-12 minutes until cookies are set
- Cool on baking sheets for 5 minutes before transferring
- Dust with additional cocoa powder if desired
- Serve warm for melted marshmallow center
