Hobo Casserole Rustic Ground Beef and Potato Bake

Ingredients
  

For the Main Dish
  • 1.5 pounds ground beef
  • 4 medium potatoes peeled and diced
  • 1 large onion chopped
  • 2 cloves garlic minced
  • 1 cup shredded cheddar cheese
  • 1/2 cup chopped green bell pepper
  • 2 tablespoons olive oil
  • Salt and pepper to taste
For the Sauce
  • 1 cup beef broth
  • 1/2 cup tomato sauce
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried thyme
For Garnish
  • 2 tablespoons chopped fresh parsley

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Peel and dice the potatoes into small cubes to ensure even cooking.
  3. Chop the onion, bell pepper, and mince the garlic, setting them aside.
Cooking
  1. In a large skillet, heat olive oil over medium heat and sauté onions, bell pepper, and garlic until softened, about 5 minutes.
  2. Add the ground beef to the skillet, breaking it apart with a spoon, and cook until browned and cooked through; season with salt and pepper.
  3. In a separate bowl, whisk together beef broth, tomato sauce, Worcestershire sauce, smoked paprika, and thyme to make the sauce.
  4. In a large baking dish, layer half of the diced potatoes, then the cooked beef mixture, and then the remaining potatoes on top.
  5. Pour the sauce evenly over the layers in the baking dish.
Finishing
  1. Cover the baking dish with foil and bake in the preheated oven for 35 minutes.
  2. Remove the foil, sprinkle shredded cheddar cheese evenly on top, and bake uncovered for an additional 10 minutes until the cheese is melted and bubbly.
  3. Garnish with chopped fresh parsley before serving warm.
