Preparation
- Preheat your oven to 375°F (190°C).
- Peel and dice the potatoes into small cubes to ensure even cooking.
- Chop the onion, bell pepper, and mince the garlic, setting them aside.
Cooking
- In a large skillet, heat olive oil over medium heat and sauté onions, bell pepper, and garlic until softened, about 5 minutes.
- Add the ground beef to the skillet, breaking it apart with a spoon, and cook until browned and cooked through; season with salt and pepper.
- In a separate bowl, whisk together beef broth, tomato sauce, Worcestershire sauce, smoked paprika, and thyme to make the sauce.
- In a large baking dish, layer half of the diced potatoes, then the cooked beef mixture, and then the remaining potatoes on top.
- Pour the sauce evenly over the layers in the baking dish.
Finishing
- Cover the baking dish with foil and bake in the preheated oven for 35 minutes.
- Remove the foil, sprinkle shredded cheddar cheese evenly on top, and bake uncovered for an additional 10 minutes until the cheese is melted and bubbly.
- Garnish with chopped fresh parsley before serving warm.
