Ingredients
  

Chicken and Marinade
  • 1.5 lbs chicken thighs boneless skinless
  • 2 tbsp soy sauce
  • 1 tbsp sake or dry sherry
  • 1 tsp grated ginger
  • 1 clove garlic minced
  • 1 tbsp vegetable oil
Hibachi Vegetables
  • 1 onion cut into large pieces
  • 2 zucchini sliced
  • 1 cup mushrooms sliced
  • 1 bell pepper sliced
Hibachi Sauce
  • 1/4 cup soy sauce
  • 2 tbsp mirin
  • 1 tbsp sake
  • 1 tsp sugar
  • 1 tbsp butter
Fried Rice (Optional)
  • 3 cups cooked rice chilled
  • 2 eggs beaten
  • 1/2 cup frozen peas and carrots
  • 2 tbsp soy sauce
  • 1 tbsp butter

Method
 

Marinate Chicken
  1. Cut chicken into bite-sized pieces
  2. Combine with marinade ingredients and refrigerate 30 minutes
Prepare Hibachi
  1. Heat large skillet or griddle over high heat
  2. Add oil and cook chicken until browned and cooked through
  3. Remove chicken and set aside
Cook Vegetables
  1. In same skillet, add more oil if needed
  2. Cook vegetables until tender-crisp
  3. Push vegetables to side of skillet
Make Fried Rice
  1. Add butter to skillet
  2. Scramble eggs, then add chilled rice
  3. Stir-fry until rice is heated through
  4. Add peas, carrots, and soy sauce
Combine and Serve
  1. Return chicken to skillet
  2. Add hibachi sauce ingredients
  3. Toss everything together until well coated
  4. Serve immediately with extra sauce on side
