Grilled Aloha Chicken and Pineapple

Ingredients
  

For the Marinade
  • 1/2 cup pineapple juice
  • 1/4 cup soy sauce
  • 2 tbsp brown sugar
  • 1 tbsp ketchup
  • 1 tsp ginger grated
  • 2 cloves garlic minced
For the Grill
  • 4 boneless skinless chicken breasts
  • 4-6 fresh pineapple rings
  • 1 red onion cut into thick wedges

Method
 

Preparation
  1. Whisk all marinade ingredients together in a bowl.
  2. Place chicken in a zip-top bag and pour in half the marinade. Refrigerate for at least 30 minutes.
Grilling
  1. Preheat grill to medium-high heat.
  2. Grill chicken for 6-7 minutes per side, brushing with the reserved marinade during the last few minutes.
  3. Grill pineapple rings and onion wedges for 2-3 minutes per side until charred.
Finishing
  1. Serve the chicken topped with a grilled pineapple ring and onion wedges. Drizzle with any remaining glaze.
