- Cook noodles according to package directions until al dente. Drain well and set aside.
- While noodles are cooking, whisk together soy sauce, rice vinegar, toasted sesame oil, brown sugar, minced garlic, grated ginger (if using), and red pepper flakes in a large bowl until sugar is dissolved.
- Add the drained noodles to the bowl with the sauce. Toss well to ensure all noodles are evenly coated.
- Serve immediately, garnished with chopped green onions and toasted sesame seeds, if desired.
Notes
For a richer flavor, you can add a teaspoon of peanut butter to the sauce. If you prefer a spicier kick, increase the amount of red pepper flakes or add a dash of sriracha. These noodles are great hot or cold, making them perfect for meal prep. Store leftovers in an airtight container in the refrigerator for up to 3 days.
