Ingredients
  

Chicken
  • 4 chicken thighs bone-in, skin-on
  • 1 tsp paprika
  • Salt and pepper to taste
Potatoes
  • 1.5 lbs baby potatoes halved
  • 2 tbsp olive oil
  • 1 tsp rosemary
Sauce
  • 4 cloves garlic minced
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup Parmesan cheese grated
Garnish
  • 2 tbsp parsley chopped
  • Lemon zest

Method
 

Prep
  1. Preheat oven to 400°F (200°C)
  2. Season chicken with paprika, salt and pepper
Sear
  1. Sear chicken skin-side down in oven-safe skillet
  2. Remove chicken, add potatoes to skillet
Roast
  1. Roast potatoes for 20 minutes
  2. Return chicken to skillet skin-side up
Sauce
  1. Sauté garlic in skillet
  2. Add broth, cream and Parmesan, simmer until thickened
  3. Garnish with parsley and lemon zest
